Getting Back to School

Hello, August!

Well, the summer flew by and it is now August. While the weather still feels like summer, we are changing the seasons and rhythms for fall and a different type of schedule and routines - probably more structured when planning and being prepared comes in handy.

I love decorating for Fall early - Fall is my favorite and while we don’t get much of a Fall weather season in Central Texas, I do want to create as much of a Fall feeling and enjoy it as long as possible. So up goes the Fall decorations either August 1st or the First Day of School - what a way to honor the changing of seasons and rhythms and have a visual reminder of it. You know I am all things Hygge - all year long - but Fall really brings out the hygge in me with softer textures, warmer colors, cozy blankets, candles, and fall scents to fill the senses with all things Fall. And despite the teasing from my family - I think they secretly love it.

My kids’ absolute favorite recipe is simple and perfect for Fall - I mean, they request this all year long but there is nothing like putting up the fall decor, lighting some candles, filing the diffuser with some fall scents, putting this family favorite in the crock pot or on the stove top, and waiting for the kids to come home from their first day of school. This year we won’t have anyone coming home from their first day of school…but the tradition will remain.

Family Favorite Taco Soup

(Perfect for the Crock Pot or Stovetop!)

This Taco Soup has been a family favorite for years! It's one of those easy, comforting meals that everyone loves, and it's perfect for busy weeknights, meal prepping, or feeding a crowd. Whether you let it simmer all day in the slow cooker or throw it together on the stovetop after work, it's always a winner.

🌮 Ingredients

  • 2 lb ground beef or ground turkey (I like to do one of each)

  • 1 small onion, diced

  • 2 cloves garlic, minced (optional)

  • 2 packets taco seasoning

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (15 oz) can corn, drained (or 1½ cups frozen corn; optional)

  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)

  • 1 (15 oz) can diced tomatoes

  • 1 (15 oz) can tomato sauce

  • 2 cups beef or chicken broth

👩‍🍳 Crock Pot Instructions

  1. Add ground beef (or turkey) with the diced onion and garlic to the crock pot.

  2. Stir in the taco seasoning.

  3. Add the beans, corn, Rotel, diced tomatoes, tomato sauce, and broth.

  4. Stir everything together.

  5. Cook on Low for 6–8 hours or High for 3–4 hours.

Dinner is ready when you are!

🍲 Stovetop Instructions

  1. Brown the ground beef (or turkey) and onion in a large soup pot. Drain any grease.

  2. Stir in the taco seasoning.

  3. Add the remaining ingredients and mix well.

  4. Bring to a gentle boil, then reduce the heat and simmer for 20–30 minutes, stirring occasionally.

Everyone can make it their own!

  • Shredded cheddar cheese

  • Sour cream

  • Tortilla chips or Fritos

  • Sliced avocado

  • Fresh cilantro

  • Green onions

  • Jalapeños

  • Lime wedges

❤️ Jen's Tip

This soup is even better the next day! Make a double batch and freeze leftovers for an easy meal on busy nights. It also pairs perfectly with cornbread, tortilla chips, or a simple green salad.
